Congratulations to Tappara on an unbelievable 2012-2013 season!

Tappara played Game 6 of the Championship round on Wednesday night. A series and season-ending game was played, and Tappara’s opponent Ässät, became the 2012-2013 SM-liiga Champions. Chris and his team should be so proud of all they have accomplished this season!!

Super Greens, Strawberry & Avocado Salad with Lemon Poppy Seed Dressing

Hi All–I’m unpacked and settling in, here in MinneSNOWta Minnesota!

I thought I’d share a yummy salad recipe that my family made and loved, the other night.

Super Greens, Strawberry & Avocado Salad with Lemon Poppy Seed Dressing

Adapted from Two Peas & Their Pod

Ingredients:

For the salad:

4 cups chopped kale, stems removed

2 cups chopped spinach

1 cup sliced strawberries

1/3 C sliced almonds

1/4 C feta cheese

For the dressing:

2 Tbsp olive oil

2 Tbsp lemon juice

1 tsp honey

1/2 tsp poppy seeds

1/8 tsp salt

1/8 tsp black pepper

Directions:

Massage kale until darker in color and tender.

Place kale and spinach in a large bowl.

Add strawberries, avocado, almonds and feta cheese.

In a small jar, combine olive oil, lemon juice, honey, poppy seeds, salt and pepper. Mix well.

Pour the dressing over the salad and serve.

This salad was an amazing addition to our meal, but would be wonderful as a main entree salad with grilled chicken added to it!

For Boston

Marathon Monday and Patriots Day.

A holiday around the city of Boston and something people look forward to each year. A day that I have been fortunate to be at a handful of times, in a city that I have been lucky enough to call home. A day that is very special to me, as it is the day that Chris and I met, three years ago, while cheering on mutual friends running the marathon.

My heart, my thoughts and all of my prayers go out to the victims, their families and all of those affected by the tragic events that have occurred today in Boston. Xo
